“Going down the coast of Livorno, you come across the fine oils of Castagneto Carducci, fruity, full-bodied, tasty, less aggressive than those of Grosseto…”

The world of oil, Slow food manual

Our olive trees, 450 plants, are on the hills of Castagneto Carducci in well-ventilated and sunny areas. Some are ancient plants, over 150 years old, most are adult plants from 80 to about 30 years old. We have mostly Frantoio varieties, but also Moraiolo, Leccino, Pendolino and Lazzero.
We raise them following certified organic and biodynamic methods. We prune them gently, a little every year, so as not to stress the plants and maintain constant production.
We harvest the olives in October, to have an oil rich in polyphenols and vitamin E, mainly by hand, the branches plus others with a facilitator. At the end of the day we take the olives to the Mill of “Terre dell’Etruria” in Donoratico. Our oil is produced within 24 hours.

Artichoke, thistle, thyme, sage, basil, green pepper, celery, citrus peel, turmeric, cinnamon, ginger…these are the scents of our oil!
